    Longevity Peaches

      Materials:
      1000g Chinese yam
      500g red Chinese date
      30g haw jelly
      5g green and red shreds of candied fruit 2 green plums
      200g sugar

      Preparations
    1. Wash the dates, stew till very soft then peel, stone and mash into a paste. Wash the yam, steam till soft, peel and mash into a paste.
    2. Slice the haw jelly, and chop finely the green plums. Fry the date paste and white sugar in lard over a low heat till no water is left.
    3. Put the date paste in the middle of a plate; mould the yam paste into a peach shape to cover the date paste; mould leaves, using yam paste containing a little green plum, and place on both sides of the "peach"; use the green shreds for leaf veins; arrange the haw jelly into a word on the peach, stick red shreds onto the tip of the peach, steam for 5 minutes.
    4. Dissolve white sugar in hot water, boil, thicken with cornflour to make a sauce, pour over the peach.
